Vegan Spicy Chickpea Wrap

I love wraps especially in the summer. They make for easy, quick dinners for a busy schedule. Chickpea’s are so versatile and can take on any flavor. If you like a little bit of spice you will love this recipe. The chickpea mixture tastes even better the next day. You can also add on top of any salad.

Ingredients:

  • 2 15 oz cans of chickpeas
  • 1/4 cup cilantro
  • 1 tsp garlic powder
  • 1 TBSP lemon Juice
  • 1-2 garlic hot sauce/sriracha
  • 1/4 cup vegan mayo
  • 1/2 tsp Himalayan sea salt
  • 1/2 tsp black pepper
  • Gluten free wraps
  • Spinach
  • Avocado
  • Shredded carrot

Directions:

  1. Place the chickpeas in a food processor and pulse until chickpeas are mostly broken down. If you don’t have a food processor, you can also use a potato masher and mash in a bowl. Add all the other ingredients and pulse or mix in. Make sure it is mixed well.
  2. Assemble your wrap, place spinach, chickpea mixture, shredded carrot, and avocado. You can drizzle additional hot sauce on top.
  3. Roll them up and enjoy!
