I love wraps especially in the summer. They make for easy, quick dinners for a busy schedule. Chickpea’s are so versatile and can take on any flavor. If you like a little bit of spice you will love this recipe. The chickpea mixture tastes even better the next day. You can also add on top of any salad.
Ingredients:
- 2 15 oz cans of chickpeas
- 1/4 cup cilantro
- 1 tsp garlic powder
- 1 TBSP lemon Juice
- 1-2 garlic hot sauce/sriracha
- 1/4 cup vegan mayo
- 1/2 tsp Himalayan sea salt
- 1/2 tsp black pepper
- Gluten free wraps
- Spinach
- Avocado
- Shredded carrot
Directions:
- Place the chickpeas in a food processor and pulse until chickpeas are mostly broken down. If you don’t have a food processor, you can also use a potato masher and mash in a bowl. Add all the other ingredients and pulse or mix in. Make sure it is mixed well.
- Assemble your wrap, place spinach, chickpea mixture, shredded carrot, and avocado. You can drizzle additional hot sauce on top.
- Roll them up and enjoy!
